He didnât want my input. I felt like, Youâre really missing something important not to take my input, because Iâve been in the kitchen, Iâve been in the dining room, I know about this. Itâs a very personal decision I make about whoâs in that kitchen. It has to do with a lot of other things besides just being a great cook. Iâm not even sure I know what they all are. They certainly have to do with a certain kind of diplomacy both in terms of customers and staff. Inspiring the staff, understanding the dynamics of how a kitchen works, trying to communicate with people upstairs as well as downstairs, not dividing the restaurant in two. Somebody who connects with dishwashers and the foragers and the office as well as the immediate staff.
Thereâve been very few people who stayed here very long who didnât have a rapport with me, or if I didnât feel that their cooking was interesting in some way to me personally. Iâve compromised on other things, but I have never compromised on the cooking piece for very long. There have been a little six months here, a little six months there, when I didnât know what to do except pull my hair out. But even with impossible peopleâaccording to the staffâthey were cooking well.
