He didn’t want my input. I felt like, You’re really missing something important not to take my input, because I’ve been in the kitchen, I’ve been in the dining room, I know about this. It’s a very personal decision I make about who’s in that kitchen. It has to do with a lot of other things besides just being a great cook. I’m not even sure I know what they all are. They certainly have to do with a certain kind of diplomacy both in terms of customers and staff. Inspiring the staff, understanding the dynamics of how a kitchen works, trying to communicate with people upstairs as well as downstairs, not dividing the restaurant in two. Somebody who connects with dishwashers and the foragers and the office as well as the immediate staff.

There’ve been very few people who stayed here very long who didn’t have a rapport with me, or if I didn’t feel that their cooking was interesting in some way to me personally. I’ve compromised on other things, but I have never compromised on the cooking piece for very long. There have been a little six months here, a little six months there, when I didn’t know what to do except pull my hair out. But even with impossible people—according to the staff—they were cooking well.
